Pre-heat Wok, medium-low (you can also start heating up sizzling plate now)
Add Vegetable Oil, Fry Garlic & Ginger till browning
Turn Wok to medium-high, add chicken. Fry till done.
Remove Chicken/garlic/gingerm set aside
Add Vegetables
Add Sesame Oil, Soy Sauce, Oyster Sauce, Salt, Water
Fry till half done, then return chicken/garlic/chicken to Wok
Add Xiao Xing Wine
Stir Fry till well done
Add Corn starch according to amount of sauce and texture required
Serve on hot sizzling plate (be careful)
